excitedly, two fridays ago, i called up
holley johnson from
myrecipes.com to chat. i had two topics in mind that i wanted to talk to her about, to hear her thoughts and advice on. i couldn't wait to hear what this adorable southern registered dietitian and food editor was going to throw at me. of course, before calling her up, i googled her!
holley has in incredibly rad job. and before she was the food editor for my myrecipes.com, she was writing the healthy food column, healthy living special and other stories as an associate editor at southern living. i know i'm totally envious. on the myrecipes.com site, holly is the host of
dinner tonight. this is where she whips up some yummy meal in 45 minutes or less in a gorgeous looking kitchen!
from the second our conversation began, i just knew the next twenty minutes was going to be awesome.
i was so right. we started off by talking about our love for taste testing and how lovely working in a foodie atmosphere is. i also swooned for five seconds over her southified accent. (i've always wanted one)
after a few minutes of gabbing,
we got down to business.i explained to her that i have always had a problem with switching up meals at lunch. i know this is a problem among many. eating the same old turkey sandwich, or peanut butter and jelly, or in my case-eggs.
holley gave me some GREAT (and delicious) suggestions that i can't wait to try out. holley is a big fan of salads-so am i-so i really enjoyed her ideas for mixing it up in the leafy green department.

Warm summer weather calls for lighter, fresh-tasting fare. From picnics and potlucks to dinners for two and lunch on the go, pasta salad is a perennial summertime favorite.
she said she likes to buy whole chickens, shrimp and pasta to switch it up in her salad. i love this idea. pasta, chicken and shrimp are all key essentials to any salad. also, she will chop up lots of fresh veggies to throw in.
holley is a big fan of soups as well. even in the summertime. (and she's a deep southern gal, remember!) she stated that most offices are always so chilly because of the air conditioning, the soup is a nice warm-up. amen, holley!
as far as soup goes, she will make individual portioned sizes and freeze them. she'll take it out to bring for lunch, leave it out, and by the time lunch finally rolls around for the day-the soup is ready to be microwaved and ready to go! a suggestion: bring half a sandwich to accompany your soup.
most of holley's soups consist of grains, veggies and beans. and her favorite soup, (which is a coloboration of ingredients) has chicken, onions, garlic and tomoates and white beans. tasty!
oh, and i truly adore! a lunch club. gather a few of your work buddies and each day a different person makes something to bring in for lunch for the whole group to eat. i think this idea is rockin'. and seriously, how cute. a fabulous and fun way to swap recipes and taste your friends cooking. it also lessens the stress of planning a meal for every single day of the week.
the next matter of business was how to shop healthily. i explained how much i struggle with buying health food because i feel as though i seriously empty my wallet. gasppp.
however, i was informed that healthy foods doesn't mean it has to be a diet brand. she said, it's important to buy natural food that hasn't been processed. because the consumer is paying for the labor and convienence. shame on me for not thinking of this before!
tips:
-stick with items that haven't been chopped-buy in whole. (broccoili, asparagus, corn, peppers, beans, etc.)
-stock up on zip lock bags from the dollar store.
-buy a regualr sized bag of cookies or chips and make 100 calorie packs yourself. (it might take a few extra minutes-but you'll save in the long run)
-buy pita bread and make your own pita chips. sprinkle cinnamon, garlic, whatever you like on to them, spray some cooking spray, cut up and throw in the oven.
